25 Minute Self-Saucing Chocolate Pudding

Dessert – mmm…something that is quick, easy and leaves almost no dishes?  CHECK!

This dessert took me 25 minutes to mix & bake.  And it was YUMMY!  I made a whole batch because I didn’t have a microwave dish big enough for a half batch.  It’s enough for 4 large servings.

3/4 cup milk

75g margerine/butter

2 tsp vanilla essence (or 1/4 tsp vanilla powder)

3/4 cup caster sugar

1 1/4 cup self-raising flour

1/4 cup cocoa powder, sifted

1 slab (90g) dark/milk chocolate, roughly chopped

1/2 cup brown sugar

1 3/4 cup boiling water

1. Place milk & butter in a microwave safe dish (6cm deep & 8-cup capacity).  Microwave on 100% for about 1 minute, until butter is melted.

2. Stir in vanilla, caster sugar, flour and 2 tbsp cocoa powder.  Level with a spatula.  Press chocolate pieces into the batter.  Sprinkle with remaining cocoa powder and brown sugar.  Pour boiling water over the back of a large metal spoon to cover the batter.

3. Place dish on an upturned plate in the microwave. Cook, uncovered, at 50% power for 10-13 minutes, or until a skewer comes out of the edge clean.  Set aside for 1 minute before dishing up.

Serve with ice cream, cream and/or fresh strawberries.
