World Diabetes Day: Caribbean Nut-Crusted Fish & Sweet Potato Fries

Today (14 November) is World Diabetes Day.  Despite being one of the most prevalent diseases in the world, diabetes is still very misunderstood.

Diabetics don’t need to stop eating tasty food, and they can still enjoy their favourite treats in moderation.  The two keywords for a diabetic’s life are balance and planning.  This should actually be the principles we all live by!

Thank you to my parents-in-law who joined us for dinner to try out this dish.  My father-in-law is a Type 1 diabetic who successfully maintains his blood sugar levels while still enjoying food!
