Chicken Parmigiana with Caramelized Corn & Red Onion

Cooking is not a lonely hobby and for me it really is a labour of love.  But that doesn’t mean you have to spend hours in the kitchen and miss spending time with your friends.

This dish takes 20 minutes from start to finish!  I’ve nicknamed it ‘pizza schnitzel’ – to give you an idea of the type of flavours.

The recipe delivers four servings.  A serving consists of 2 Parmigiana schnitzels, a large scoop of caramelized corn & onion, and an additional side (I served green salad).
Total cost:  N$95.60
